    Braised Short Ribs

    Add minced garlic to the pot and sauté for 1 minute. Pour in the beef broth and add fresh thyme. Return the short ribs to the pot, cover, and braise in the oven for about 3 hours, until tender.

    Prepare Garlic Aioli

    In a small bowl, combine mayonnaise, minced garlic, and a pinch of salt. Mix well and set aside.

    Assemble Grilled Cheese

    Once the short ribs are done, shred the meat and discard any excess fat. Heat a skillet over medium heat. Butter one side of each slice of sourdough bread. On the unbuttered side, spread a layer of garlic aioli, followed by a generous amount of shredded short rib and slices of smoked gouda cheese. Top with another slice of bread, buttered side up.

    Grill the Sandwich

    Place the sandwiches in the skillet and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Press down lightly with a spatula while cooking.
