    Fry the Green Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. In a shallow dish, mix the flour, cornmeal, salt, and pepper. Dredge each tomato slice in the mixture, ensuring they are fully coated. Heat oil in a skillet over medium heat and fry the tomato slices until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

    Prepare the Omelette

    In a bowl, whisk the eggs until fully combined. Heat a non-stick skillet over medium heat. Pour in the whisked eggs, swirling to coat the pan. Cook for about 2-3 minutes until the eggs are set but still slightly runny on top.

    Place the fried green tomatoes on one half of the omelette and sprinkle the Swiss cheese on top. Carefully fold the other half of the omelette over the filling. Allow to cook for an additional 1-2 minutes until the cheese melts.
