Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Season with salt and black pepper. Let them sit for about 10-15 minutes to draw out some moisture.

Set Up Breading Station
In one bowl, place the buttermilk. In a second bowl, combine the flour, cornmeal, salt, and black pepper. Dip each tomato slice first into the buttermilk, then dredge in the flour mixture to coat well.

Fry the Tomatoes
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded tomato slices in batches. Fry until golden brown and crispy, about 3-4 minutes on each side. Remove and place on paper towels to drain excess oil.

Cook the Bacon
In the same skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels.

Assemble the BLT
Toast the sourdough bread slices. On one slice of bread, spread a generous amount of chipotle aioli. Layer with lettuce, crispy bacon, and fried green tomatoes. Top with another slice of bread, spread more chipotle aioli if desired, and cut in half.
