Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle both sides with salt and let them sit for 10 minutes to draw out excess moisture.

Prepare the Breading Station
In a shallow bowl, place the all-purpose flour. In a second shallow bowl, pour the buttermilk. In a third shallow bowl, mix together the cornmeal, black pepper, cayenne pepper, and a pinch of salt.

Coat the Tomatoes
Dredge each tomato slice in the flour, shaking off excess. Dip into the buttermilk, allowing excess to drip off, and then coat with the cornmeal mixture, pressing lightly to adhere.

Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated tomato slices in a single layer. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Arrange the fried green tomatoes on a serving platter and drizzle with chipotle aioli before serving.
