Prepare the Cuban Aioli
In a bowl, combine mayonnaise, minced garlic, lime juice, cumin, salt, and black pepper. Mix well until smooth. Set aside.

Assemble the Quesadilla
Heat a large skillet over medium heat. Place one tortilla in the skillet. Layer half of the mojo shredded pork, sliced ham, Swiss cheese, and pickles on one half of the tortilla.

Cook the Quesadilla
Fold the tortilla over to cover the filling. Cook for 3-4 minutes until the bottom is golden brown and the cheese is melting. Flip and cook for another 3-4 minutes until the other side is golden brown.

Serve
Remove the quesadilla from the skillet and let it cool slightly. Cut into wedges and serve with a drizzle of the Cuban aioli on top.
