Prepare the Yuzu Aioli
In a small bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons yuzu juice, 1 clove minced garlic, and a pinch of salt. Set aside in the refrigerator.
Prepare the Calamari
In a large bowl, mix the all-purpose flour, cornstarch, salt, and black pepper. Dredge the calamari in this mixture until well coated.
Cook the Chorizo and Peppers
In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the chorizo and cook until browned, about 5 minutes. Add the sliced bell peppers and sauté until they are tender, about 4-5 minutes. Remove from the skillet and set aside.
Fry the Calamari
In the same skillet, add more vegetable oil if necessary (enough to deep fry). Heat the oil to 375°F (190°C). Fry the calamari in batches for about 2-3 minutes or until golden brown. Remove and drain on paper towels.
Combine and Serve
In a large serving dish, combine the fried calamari, sautéed chorizo, and peppers. Serve hot with the yuzu aioli on the side.
