Prepare the Lobster

Boil the lobster tails in salted water for about 5-6 minutes until just cooked. Remove from water, cool, and extract the meat. Cut into large chunks.

Make the Waffle Batter

In a large bowl, mix together flour, cornmeal, baking powder, salt, and black pepper. In another bowl, whisk the eggs, milk, and melted butter together. Combine the wet and dry ingredients until just mixed.

Prepare Sweet Corn Butter

In a saucepan over medium heat, melt the butter and add sweet corn. Cook for about 5 minutes until heated through and slightly caramelized. Blend until smooth and season with salt to taste.

Prepare Spicy Maple Syrup

In a small saucepan, combine maple syrup, cayenne pepper, and honey. Heat gently until warmed and well mixed.

Cook the Waffles

Preheat the waffle iron. Pour the waffle batter onto the hot iron and cook according to the manufacturer's instructions until golden brown.

Fry the Lobster

Heat vegetable oil in a deep skillet. Dredge lobster chunks in flour and fry in batches until golden brown and crispy, about 3-4 minutes. Drain on paper towels.

Plate the waffles, top with fried lobster, drizzle with spicy maple syrup, and serve with sweet corn butter on the side.
