1. Prepare the Fries

Preheat your oven to 400°F (200°C). Toss the cut potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and bake for about 30-35 minutes or until golden and crispy. In the last 5 minutes of baking, sprinkle the grated Parmesan cheese over the fries.

2. Cook the Mussels

In a large pot, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the white wine and bring to a simmer. Add the mussels, cover the pot, and cook for about 5-7 minutes or until the mussels have opened. Discard any mussels that do not open.

3. Finish the Dish

Stir in the lemon juice, chopped parsley, and thyme into the pot with mussels. Season with salt and pepper to taste. Serve the mussels immediately with the Parmesan fries on the side.
