1. Prepare the Fries
Preheat your oven to 400°F (200°C). Toss the cut potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and bake for about 30-35 minutes or until golden and crispy. In the last 5 minutes of baking, sprinkle the grated Parmesan cheese over the fries.
2. Cook the Mussels
In a large pot, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the white wine and bring to a simmer. Add the mussels, cover the pot, and cook for about 5-7 minutes or until the mussels have opened. Discard any mussels that do not open.
