Marinated Persian Cucumbers Directions
Prepare the Cucumbers
Wash the Persian cucumbers and slice them thinly. Place them in a large mixing bowl.
Make the Marinade
In a separate bowl, whisk together rice vinegar, fish sauce, soy sauce, sesame oil, cashew salsa macha, chili crisp, minced garlic, and salt to taste.
Combine
Pour the marinade over the sliced cucumbers. Toss well to ensure all the cucumber slices are coated.
Marinate
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve
Before serving, stir in chopped fresh cilantro. Serve chilled as a refreshing side dish.
