Prepare the Lobster
Boil the lobster tails in salted water for 5-7 minutes until cooked. Remove from water, let cool, and then chop into bite-sized pieces.

Make the Batter
In a bowl, mix flour, cornstarch, baking powder, salt, and black pepper. In another bowl, whisk together eggs, milk, and melted butter. Combine the wet and dry ingredients until smooth.

Fry the Lobster
Heat oil in a deep pan. Dip lobster pieces into the batter and fry in hot oil for 3-4 minutes until golden brown. Remove and drain on paper towels.

Prepare Waffles
Toast the frozen waffles according to package instructions until crispy.

Make Sweet Corn Butter
In a small saucepan, melt some butter and add sweet corn. Cook for 5 minutes until warmed through and slightly caramelized.

Prepare Spicy Maple Syrup
In a small bowl, combine maple syrup and spicy hot sauce. Stir well to combine.

Assemble the Dish
Place waffles on serving plates, top with fried lobster, drizzle with sweet corn butter, and finish with spicy maple syrup.
