Preparation Steps

  1. 1

    Prepare the Garlic Green Butter

In a food processor, blend the unsalted butter, garlic cloves, parsley, lemon juice, salt, and black pepper until smooth. Set aside.

  2. 2

    Prepare the Hazelnut Crust

Toast the hazelnuts in a dry skillet over medium heat until golden brown, about 5-7 minutes. Let cool, then chop finely or pulse in a food processor.

  3. 3

    Prepare the Snails

If using canned snails, rinse them under cold water. Preheat your oven to 400°F (200°C).

  4. 4

    Assemble the Snails

In a baking dish, place the snails in their shells or directly in the dish. Spoon the garlic green butter over each snail, and then sprinkle the chopped hazelnuts on top.

  5. 5

    Bake the Snails

Bake in the preheated oven for 12-15 minutes, until the butter is bubbling and the top is golden.

  6. 6

    Prepare the Grilled Bread

While the snails are baking, grill the slices of French bread on a grill or in a toaster until golden brown.

  7. 7

    Serve

Serve the baked snails hot with the grilled bread on the side for dipping.
