Crush the Potatoes
Once cooked, drain the potatoes and let them cool slightly. On a clean surface or using a baking sheet, gently crush each potato with the bottom of a glass or a potato masher until they are flattened but still intact.

Sauté the Potatoes
In a large skillet, heat the olive oil over medium heat. Add the crushed potatoes to the skillet and season with salt and black pepper. Sauté for 5-7 minutes on each side, or until they are golden brown and crispy.

Prepare the Toppings
While the potatoes are cooking, finely chop the green onions and set aside.

Assemble the Dish
Once the potatoes are crispy, remove them from the skillet and place them on a serving platter. Top each potato with a dollop of crème fraîche, a sprinkle of chopped green onions, and a spoonful of caviar.
