1. Prepare the Ingredients

Wash and scrub the fingerling potatoes. Slice them lengthwise into halves or quarters, depending on their size. Clean the chanterelle mushrooms gently with a damp cloth and slice them if they are large. Mince the green garlic.

2. Cook the Potatoes

In a large pot, bring salted water to a boil. Add the fingerling potatoes and cook for about 10-12 minutes until fork-tender. Drain and set aside.

3. Cook the Sirloin Steak

Season the prime sirloin with salt and black pepper. Heat a skillet over medium-high heat and add olive oil. Once hot, add the sirloin steak and sear for about 4-5 minutes on each side for medium-rare, or longer if you prefer it more cooked. Remove the steak from the skillet and let it rest.

4. Sauté the Chanterelles

In the same skillet, add a bit more olive oil if necessary, and add the chanterelle mushrooms. Sauté for about 3-4 minutes until they are golden brown. Add the minced green garlic and sauté for an additional 1-2 minutes. Remove from heat.

5. Make the Green Garlic Butter

In a small bowl, mix the softened butter with the sautéed green garlic. Add salt and pepper to taste.

6. Serve

On a plate, arrange the crispy fingerling potatoes, top with sautéed chanterelles, and place the sliced sirloin on the side. Garnish with pea greens and dollops of green garlic butter.
