    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente, according to package instructions. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt the butter over medium heat. Whisk in the flour and cook for about 2 minutes until it forms a paste (roux). Gradually whisk in the milk, stirring constantly until the mixture thickens and bubbles.

    Add Cheese and Seasoning

    Remove the pot from heat and stir in the cheddar and Gruyere cheeses until melted and smooth. Add truffle oil, salt, and black pepper, mixing well.

    Combine Pasta and Sauce

    Fold the cooked macaroni into the cheese sauce until well coated.

    If using, preheat the oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish.
