Filet Medallions w/ Crab Meat Stuffing

Method

Preparation Instructions

  1. 1

    Prepare the Crab Meat Stuffing

In a bowl, combine crab meat, cream cheese, breadcrumbs, chopped green onions, Dijon mustard, Worcestershire sauce, salt, and black pepper. Mix until well combined and set aside.

  2. 2

    Cook the Potatoes

Boil the peeled and cubed potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter, milk, salt, and pepper to taste. Set aside.

  3. 3

    Grill the Asparagus

Toss asparagus with olive oil, minced garlic, salt, and pepper. Grill over medium heat until tender, about 5-7 minutes.

  4. 4

    Cook the Medallions

Preheat a skillet over medium-high heat. Season the beef medallions with salt and pepper. Sear the medallions for 3-4 minutes on each side until browned. Remove from skillet and let rest.

  5. 5

    Prepare the Whiskey Peppercorn Sauce

In the same skillet, add whiskey and scrape the bottom to deglaze. Add heavy cream and crushed peppercorns. Simmer until sauce thickens, about 5 minutes. Season with salt to taste.

  6. 6

    Stuff the Medallions

Make a pocket in each medallion and stuff with the crab meat mixture. Return to the skillet with the sauce for 2-3 minutes.

  7. 7

    Serve

Plate the stuffed medallions alongside herbed mashed potatoes and grilled asparagus. Drizzle with whiskey peppercorn sauce.
