Prepare the Chicken
Preheat your smoker to 225°F (107°C). In a bowl, mix the olive oil, salt, pepper, garlic powder, smoked paprika, thyme, and rosemary. Rub this mixture over the airline chicken breasts thoroughly.

Smoke the Chicken
Place the seasoned chicken breasts in the smoker and smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Prepare the Brussels Sprouts
While the chicken is smoking, trim the ends of the Brussels sprouts and cut them in half. In a pot of boiling salted water, blanch the Brussels sprouts for 4-5 minutes, then drain and set aside.

Glaze the Brussels Sprouts
In a skillet, melt 2 tablespoons of butter over medium heat. Add the blanched Brussels sprouts and sauté for about 5 minutes. Pour in the orange juice and honey, and cook until the sauce thickens slightly, about 3-5 minutes. Season with salt and pepper to taste.

Serve
Once the chicken is done, let it rest for 5 minutes, then slice and serve alongside the herbed mashed potatoes and glazed Brussels sprouts.
