Peel the Vidalia onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.

In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in the cold sparkling water until smooth.

Heat the Oil
In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off.

Carefully drop the battered onion rings into the hot oil, frying in batches until golden brown, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.
