    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt and slowly whisk in the grits. Reduce heat to low and simmer for 20-25 minutes, stirring occasionally until thick. Stir in the butter and Parmesan cheese until well combined.

    Make the Grit Cakes

    Once the grits are cooked, spread them into a greased dish and let cool completely. Once cooled, cut into squares and set aside.

    Cook the Andouille Sausage

    In a large skillet, heat 1 tbsp of olive oil over medium heat. Add sliced andouille sausage and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

    Prepare the Tomato Gravy

    In the same skillet, add another tbsp of olive oil and minced garlic. Sauté for 1 minute, then add tomato sauce, cooked sausage, black pepper, and paprika. Simmer for 10 minutes.

    Sauté the Spinach

    In a separate pan, add a little olive oil and sauté the spinach until wilted, about 3-4 minutes. Season with salt and pepper to taste.

    Fry the Grit Cakes

    In a non-stick skillet, heat oil over medium heat. Fry the grit squares until golden brown on both sides, about 3-4 minutes per side.

    Cook the Shrimp

    In another skillet, add a little olive oil and cook the shrimp until pink and opaque, about 2-3 minutes per side. Season with salt and pepper.

    Assemble the Dish

    On each plate, place a fried grit cake, top with sautéed spinach, shrimp, and drizzle with tomato gravy. Serve immediately.
