Prepare the Marinade
In a bowl, combine the mango puree, soy sauce, honey, minced garlic, grated ginger, lime juice, salt, black pepper, and chili flakes. Mix well until all ingredients are blended.

Marinate the Ribs
Place the pork ribs in a large dish and pour the marinade over them. Make sure the ribs are thoroughly coated. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.

Preheat the Oven
Preheat your oven to 150°C (300°F).

Bake the Ribs
Remove the ribs from the marinade and place them on a baking sheet lined with aluminum foil. Reserve the marinade. Bake the ribs in the preheated oven for 2.5 hours.

Glaze the Ribs
After 2.5 hours, remove the ribs from the oven and brush them with the reserved marinade. Increase the oven temperature to 200°C (400°F) and return the ribs to the oven. Bake for an additional 15-20 minutes, or until the glaze is caramelized.

Serve
Remove the ribs from the oven, let them rest for a few minutes, then cut into portions and serve warm.
