Grit Cake Ingredients

Method

Grit Cake Directions

  1. 1

    Prepare the Grits

In a medium saucepan, bring 4 cups of water and 1 tsp of salt to a boil. Gradually whisk in the corn grits. Reduce heat to low and cook, stirring frequently, until the grits are thick and creamy, about 15-20 minutes. Remove from heat and stir in 2 tbs of butter.

  2. 2

    Mix the Batter

In a large bowl, beat the eggs. Slowly add the cooked grits to the eggs, mixing well. Stir in the cheddar cheese, chopped green onions, black pepper, paprika, and baking powder until evenly combined.

  3. 3

    Bake the Cake

Preheat the oven to 350°F (175°C). Grease a 9-inch round baking pan. Pour the grit mixture into the prepared pan and spread it evenly. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

  4. 4

    Serve

Let the grit cake cool for about 10 minutes before slicing. Serve warm or at room temperature, garnished with additional green onions if desired.
