Prepare the Mahi Mahi
In a bowl, combine olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Coat the Mahi Mahi fillets in this marinade and let them sit for at least 15 minutes.

Cook the Mahi Mahi
Heat a grill or pan over medium-high heat. Cook the marinated Mahi Mahi fillets for about 4-5 minutes on each side, or until cooked through and flaky.

Prepare the Quinoa
In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Cook Asparagus
While the quinoa cooks, steam or sauté the asparagus until tender, about 5-7 minutes.

Plate and Serve
Serve the Mahi Mahi alongside the cooked quinoa and asparagus. Drizzle with additional lemon juice if desired.
