    In a bowl, mix together the ground pork, grated ginger, minced garlic, soy sauce, sesame oil, chopped green onions, salt, and pepper until well combined. Set aside.

    In a saucepan, bring the chicken broth to a simmer. Add the gelatin powder, soy sauce, sliced ginger, and chopped scallions. Stir well and simmer for about 10 minutes. Remove from heat and let it cool slightly before straining out solids. Chill until it thickens slightly.

    Divide the dough into small balls (about 1 inch in diameter). Roll each ball into a thin circle (about 3 inches in diameter). Place about 1 tablespoon of the pork filling in the center and top it with a small spoonful of the broth. Carefully fold the dough over the filling, pleating the edges to seal the dumpling tightly.
