1. Make the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.

Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let it cool.

Add the eggs one at a time, mixing on low speed until just combined. Avoid overmixing.

Pour the cheese mixture over the cooled crust in the springform pan and spread it evenly.

Bake the cheesecake in the preheated oven for 45-50 minutes or until the center is set and only slightly jiggly.

8. Cool the Cheesecake

Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour. Then refrigerate for at least 4 hours or overnight.
