Method

Preparation of Filling

  1. 1

    Cook the Pork

In a skillet over medium heat, add the ground pork. Cook for about 5-7 minutes, stirring occasionally, until the pork is browned and cooked through. Season with salt and black pepper.

  2. 2

    Prepare the Shrimp

In the same skillet, add the minced garlic and grated ginger to the cooked pork. Then add the shrimp and cook for another 3-4 minutes until the shrimp turns pink and opaque.

  3. 3

    Combine Vegetables

In a bowl, combine the julienned carrot, cucumber, and red bell pepper. Add the fresh cilantro and mint leaves. Mix well.

Assembly of Spring Rolls

  1. 4

    Soften Rice Paper

Fill a large bowl with warm water. Dip one rice paper wrapper into the warm water for about 10-15 seconds until it’s soft but still slightly firm.

  2. 5

    Add Filling

Lay the softened rice paper on a clean surface. In the center, place a spoonful of the pork and shrimp mixture followed by a small handful of the vegetable mixture.

  3. 6

    Roll the Spring Roll

Fold the sides of the rice paper over the filling, then roll it away from you to form a tight roll. Repeat with the remaining wrappers and filling.

Preparation of Sauce

  1. 7

    Mix the Sauce

In a small bowl, combine the soy sauce, lime juice, chili paste, and honey. Stir until well blended.

Serving

  1. 8

    Serve the Rolls

Arrange the spring rolls on a platter and serve with the dipping sauce.
