Prepare the Mochi Dough

    Combine Ingredients

    In a microwave-safe bowl, mix the sweet rice flour and granulated sugar together. Gradually add the water, stirring until smooth and combined.

    Microwave the Mixture

    Cover the bowl with plastic wrap or a microwave-safe lid. Microwave on high for 1 minute. Stir the mixture, then cover and microwave for an additional 1 minute. Repeat this process, microwaving for 30 seconds at a time, until the dough is sticky and translucent (approximately 2-3 minutes total).

    Dust with Cornstarch

    On a clean surface, sprinkle cornstarch generously. Transfer the mochi dough onto the cornstarch-dusted surface and dust the top of the dough with more cornstarch to prevent sticking.

    Roll Out the Dough

    Using a rolling pin or your hands, flatten the dough to about 1/4 inch thick. Cut out circles using a cookie cutter or a glass, about 3-4 inches in diameter.

Assemble the Mochi Ice Cream

    Scoop Ice Cream

    Scoop the ice cream into balls, about 1-2 tablespoons each. Place them on a tray lined with parchment paper and freeze for about 15 minutes to firm up.

    Wrap the Mochi

    Take a mochi circle and place a scoop of ice cream in the center. Pinch the edges of the mochi circle together to enclose the ice cream completely. Roll it in your hands to form a smooth ball.

    Repeat

    Repeat the process with the remaining mochi circles and ice cream until all are filled.

    If desired, roll the mochi ice cream balls in powdered sugar or coconut flakes for added flavor and presentation.
