Prepare the Filling
In a mixing bowl, combine the peeled and deveined shrimp, ground pork, finely chopped mushrooms, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Make the Dough
In a large bowl, mix the all-purpose flour and salt. Gradually add warm water while stirring until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
Assembly and Cooking

Roll out the Dough
After resting, divide the dough into small pieces and roll each piece into a thin circle about 3 inches in diameter.

Fill the Wrappers
Place a small spoonful of the shrimp filling in the center of each wrapper. Fold the wrapper over to create a half-moon shape and pinch the edges to seal tightly.

Cook the Shumai
In a steamer, arrange the filled shumai in a single layer, ensuring they don’t touch. Steam over boiling water for 10-12 minutes until cooked through.

Serve
Remove from the steamer and serve warm with soy sauce or your favorite dipping sauce.
