Crust Preparation

Prepare the crust
In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in a preheated oven at 350°F (175°C) for about 8-10 minutes until lightly golden. Remove from the oven and let it cool.

Mix the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and mix until well combined.

Add eggs
Add the eggs one at a time, mixing well after each addition until fully incorporated.

Incorporate remaining ingredients
Add the sour cream, green tea powder, vanilla extract, and flour. Mix until the batter is smooth and all ingredients are well combined.

Pour into crust
Carefully pour the cheesecake filling over the cooled crust in the springform pan.
Baking

Bake the cheesecake
Bake in the preheated oven at 325°F (160°C) for approximately 50-60 minutes. The edges should be set but the center may still have a slight jiggle.

Cool and chill
Turn off the oven and crack the door open, allowing the cheesecake to cool slowly inside the oven for about 1 hour. After cooling, refrigerate for at least 4 hours, preferably overnight.

Prepare the topping
If desired, whip the cream until soft peaks form. Fold in matcha powder gently.

Serve the cheesecake
Remove the cheesecake from the springform pan. Top with whipped cream and fresh berries if desired. Slice and enjoy!
