Preparing the Broth

    Roasting the Bones

    Preheat the oven to 200°C (400°F). Place the beef bones on a roasting tray and roast for 30-40 minutes until browned.

    Simmering the Broth

    In a large pot, add the roasted bones, water, ginger (sliced), garlic (smashed), and onion (quartered). Bring to a boil, then reduce to a simmer and cook for at least 4 hours (8-12 hours is ideal for deeper flavor).

    Flavoring the Broth

    After simmering, strain the broth through a fine sieve into a clean pot. Return to heat and add soy sauce, mirin, salt, and peppercorns. Simmer for an additional 30 minutes.

Cooking the Noodles and Toppings

    Cooking the Ramen Noodles

    In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions, usually around 3-4 minutes. Drain and set aside.

    Preparing the Beef Topping

    Quickly sear the thinly sliced beef in a hot pan for about 1-2 minutes until just cooked. Remove from heat.

    Cooking the Bok Choy

    In the same pan, add bok choy and sauté for about 2-3 minutes until wilted.

    Soft-Boiling the Eggs

    Bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes. Transfer to an ice bath to cool before peeling.

Assembling the Ramen

    Serving the Bowl

    In a deep bowl, place a serving of cooked noodles. Ladle the hot beef broth over the noodles until submerged.

    Adding Toppings

    Top the ramen with seared beef, soft-boiled eggs (cut in half), sautéed bok choy, and nori sheets.

    Finishing Touches

    Sprinkle sesame seeds and sliced green onions on top for garnish. Serve hot.
