Method
Prepare Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season Rice
Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice and let it cool to room temperature.
Make Nigiri

Shape Rice
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 1 tablespoon) and shape it into an oval.

Top with Fish
Place a slice of salmon or tuna on top of the shaped rice. Use a small amount of wasabi if desired.

Repeat
Repeat the process for the remaining slices of fish and rice. Arrange on a platter.
Make Maki

Prepare Nori
Place a nori sheet shiny side down on a bamboo sushi mat.

Spread Rice
Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving about an inch at the top.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.

Slice and Serve
Using a sharp knife, slice the roll into bite-sized pieces. Arrange on a platter.
