Preparation

1. Chop the Vegetables

Dice the onion, carrots, and celery into small pieces. Mince the garlic. Peel and chop the potatoes into cubes.

2. Sauté the Vegetables

In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion, carrots, celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened.

3. Add Broth and Water

Pour in the vegetable broth and water into the pot. Stir to combine.

4. Season the Soup

Add salt, black pepper, thyme, and bay leaves to the pot. Bring the mixture to a boil.

5. Add Potatoes

Once boiling, add the cubed potatoes to the pot. Reduce the heat to low and let the soup simmer for about 20-30 minutes or until the potatoes are tender.

6. Finish and Serve

Remove bay leaves before serving. If desired, garnish with fresh parsley. Serve hot.
