Preparing Sushi Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This helps to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Preparing Sushi Fillings

    Slice the Fish

    Using a sharp knife, slice the fresh salmon and tuna fillets into thin, even strips.

    Prepare Vegetables

    Cut the avocado in half, remove the pit, and slice it into thin strips. Peel and slice the cucumber into thin matchsticks.

Assembling Sushi

    Lay Out Nori

    Place a sheet of nori on a bamboo sushi mat, shiny side down.

    Add Sushi Rice

    With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Arrange a few slices of salmon, tuna, avocado, and cucumber horizontally across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to create a tight roll. Seal the edge of the nori with a little water.

    Slice the Roll

    Using a sharp knife, slice the sushi roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to prevent sticking.

Serving

    Plate the Sushi

    Arrange the sliced sushi rolls on a serving platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
