Prepare the Filling

Cook the Pork
In a large skillet over medium heat, add the ground pork. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Add Vegetables
Add the shredded carrots, shredded cabbage, chopped green onions, and minced garlic to the skillet. Stir and cook for an additional 5 minutes until the vegetables are tender.

Season the Filling
Stir in the soy sauce, sesame oil, salt, and black pepper. Mix well and remove from heat. Allow the mixture to cool slightly.
Assemble Spring Rolls

Prepare the Wrappers
Lay one spring roll wrapper on a clean, dry surface with one corner pointing towards you. Place about 2 tablespoons of the filling in the center of the wrapper.

Roll the Spring Roll
Fold the corner closest to you over the filling, then fold the sides in towards the center and roll away from you to form a tight roll. Seal the edge with a little water.

Repeat the process until all filling is used.
Fry the Spring Rolls

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Spring Rolls
Carefully add the spring rolls in batches to the hot oil, frying for about 3-4 minutes on each side or until golden brown.

Drain and Serve
Remove the spring rolls with a slotted spoon and drain on paper towels. Serve hot with your choice of dipping sauce.
