Prepare the Filling

    Combine Ingredients

    In a large mixing bowl, combine the ground shrimp, ground pork, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, cornstarch, salt, and white pepper. Mix well until all ingredients are evenly incorporated.

    Chill the Filling

    Cover the bowl with plastic wrap and refrigerate the filling for at least 30 minutes to allow the flavors to meld.

Assemble the Shumai

    Prepare Wonton Wrappers

    Take a wonton wrapper and place it in the palm of your hand. Add about 1 tablespoon of the filling mixture to the center of the wrapper.

    Shape the Dumpling

    Gently gather the edges of the wrapper around the filling, pinching the top to create a cup-like shape. Leave the filling exposed at the top.

    Repeat

    Repeat the process with the remaining wrappers and filling until all shumai are assembled.

Cook the Shumai

    Prepare Steamer

    Set up a steamer by boiling water in a pot. Line the steamer basket with parchment paper or lightly oil it to prevent sticking.

    Steam the Shumai

    Place the shumai in the steamer basket, ensuring they are not touching each other. Cover and steam for about 10-12 minutes or until the filling is cooked through and the wrappers are translucent.

Prepare the Dipping Sauce

    Mix Sauce Ingredients

    In a small bowl, combine soy sauce, rice vinegar, chili oil, and toasted sesame seeds. Stir well to combine.

Serve

    Remove the steamed shumai from the steamer and serve hot with the dipping sauce on the side.
