Prepare the Broth

    Simmer the Bones

    In a large pot, add the chicken or pork bones and cover with water. Bring to a boil and then reduce to a simmer. Cook for 4-6 hours, skimming off any foam that rises to the surface.

    Add Flavorings

    After simmering, add soy sauce, mirin, garlic, ginger, and green onions to the pot. Continue to simmer for an additional hour to allow the flavors to meld.

    Strain the Broth

    Once the broth is flavored, strain the liquid into a clean pot to remove the solids. Keep the broth warm over low heat.

Cook the Noodles

    Boil the Noodles

    In a separate pot, bring water to a boil. Add ramen noodles and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process.

Prepare the Toppings

    Prepare Soft-Boiled Eggs

    Bring a small pot of water to a boil. Gently add the eggs and cook for 6-7 minutes. Transfer to an ice bath to cool, then peel.

    Slice Chashu Pork

    If you have pre-cooked chashu pork, slice it thinly. If not, prepare the chashu according to your preferred recipe.

    Prepare Other Toppings

    Slice mushrooms and prepare the bamboo shoots and corn kernels. Set all toppings aside.

Assemble the Ramen

    Combine Ingredients

    In a serving bowl, place a portion of noodles. Ladle hot broth over the noodles and top with soft-boiled egg halves, chashu pork slices, bamboo shoots, sliced mushrooms, corn, and nori sheets.

    Garnish and Serve

    Sprinkle sesame seeds over the top and drizzle with chili oil for added flavor. Serve hot and enjoy!
