Mix Dry Ingredients
In a large mixing bowl, combine the sweet rice flour and granulated sugar.
- 2
Add Water
Gradually add the water to the dry mixture while stirring continuously until smooth.
- 3
Add Food Coloring
If using, add food coloring to the mixture and stir until evenly distributed.
- 4
Steam Mixture
Pour the mixture into a heatproof dish and steam for about 20 minutes, or until the dough is translucent and cooked through.
- 5
Cool the Dough
Allow the mochi dough to cool for about 10 minutes before handling.
- 6
Dust with Cornstarch
Dust a clean surface with cornstarch to prevent sticking, and transfer the mochi dough onto it.
Assembly
- 7
Divide Dough
Divide the mochi dough into small pieces, roughly the size of golf balls.
- 8
Flatten Dough
Using your fingers, flatten each piece of mochi dough into a disc about 1/4 inch thick.
- 9
Add Ice Cream
Scoop a small amount of ice cream (about 1 tablespoon) onto the center of each flattened mochi disc.
- 10
Wrap Ice Cream
Carefully fold the edges of the mochi dough over the ice cream and pinch to seal completely.
- 11
Repeat Process
Repeat the process until all ice cream and mochi dough are used.
- 12
Freeze Mochi Ice Cream
Place the filled mochi ice cream balls on a tray lined with parchment paper and freeze for at least 2 hours, or until firm.
