Prepare the Hash Browns

In a large skillet, melt 1 tablespoon of butter over medium heat. Add the hash browns and cook until golden brown and crispy, about 5-7 minutes. Remove from skillet and set aside.

Cook the Vegetables and Ham

In the same skillet, add another tablespoon of butter. Add the diced onion, celery, and green pepper. Sauté for about 3-4 minutes until they are tender. Stir in the diced ham and cook for an additional 2 minutes.

Prepare the Omelette

In a bowl, beat the eggs with salt and black pepper. Pour the egg mixture over the sautéed vegetables and ham in the skillet. Cook on medium heat until the edges begin to set, about 5 minutes.

Add Cheese and Hash Browns

Sprinkle the shredded American cheese and cheese sauce over one half of the omelette. Then, add half of the cooked hash browns on top of the cheese. Carefully fold the other half of the omelette over the filled side.

Finish Cooking

Cover the skillet and let the omelette cook for an additional 3-4 minutes, or until the cheese melts and the eggs are fully cooked.

Serve

Slide the omelette onto a plate and serve with the remaining hash browns on the side.
