Caramelize the Onions
In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, until the onions are translucent and caramelized, about 15-20 minutes. Set aside.

Assemble the Sandwich
Spread 1 tablespoon of pesto on two slices of sourdough bread. Layer the smoked turkey breast, caramelized onions, and slices of gouda cheese on top. Top with the remaining slices of sourdough bread.

Grill the Sandwich
In the same skillet, melt the remaining tablespoon of butter over medium heat. Place the sandwiches in the skillet and grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Season with black pepper to taste.

Remove the sandwiches from the skillet, slice in half, and serve hot.
