Preparation

Prepare the Tartar Sauce

In a bowl, mix together mayonnaise, finely chopped pickles, lemon juice, capers, and fresh dill (if using). Refrigerate until serving.

Prepare the Potatoes

Peel and cut the potatoes into thick fries. Rinse them in cold water and pat dry with a towel.

Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 4-5 minutes. Remove and drain on paper towels, and season with salt.

Make the Batter

In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until you achieve a smooth batter.

Fry the Halibut

Dip halibut fillets into the batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown and cooked through, about 4-6 minutes. Remove and drain on paper towels.

Serve

Serve the crispy halibut with hot fries and a side of homemade tartar sauce.
