    Peel the Plantains

    Using a sharp knife, cut off the ends of the green plantains. Make a shallow cut along the length of the plantain and carefully peel off the skin.

    Slice the Plantains

    Slice the peeled plantains into 1-inch thick pieces, creating rounds.

Frying

    Heat the Oil

    In a large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of plantain into it; if it sizzles, the oil is ready.

    Fry the Plantain Slices

    Carefully add the plantain slices to the hot oil in batches. Fry for about 3-4 minutes until they are lightly golden. Remove them from the oil and place on paper towels to drain excess oil.

    Flatten the Fried Plantains

    Using the bottom of a heavy plate or a tostonera, flatten each fried plantain slice to about 1/2 inch thick.

    Second Fry

    Return the flattened plantains to the hot oil and fry for another 2-3 minutes until they are golden brown and crispy. Remove and drain on paper towels again.

Serving

    Season and Serve

    Sprinkle the hot tostones with salt and garlic powder. Serve immediately with fresh cilantro, lime wedges, and hot sauce on the side for dipping.
