Method

Preparing the Churrasco

    Season the Steak

    In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Mix well to create a marinade.

    Marinate the Steak

    Rub the marinade all over the flank steak, ensuring it is evenly coated. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Preheat the Grill

    Preheat your grill to high heat (about 450°F to 500°F).

    Grill the Steak

    Place the marinated steak on the grill and cook for about 5-7 minutes per side for medium-rare, or until desired doneness is reached.

    Rest the Steak

    Remove the steak from the grill and let it rest for 5-10 minutes before slicing.

Making the Chimichurri Sauce

    Combine Ingredients

    In a medium bowl, mix together the chopped parsley, chopped oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.

    Blend the Sauce

    Whisk the mixture until all ingredients are well combined. Adjust seasoning to taste. Let it sit for at least 10 minutes to allow the flavors to meld.

Serving

    Slice and Serve

    Slice the rested steak against the grain into thin strips. Serve it on a platter with the chimichurri sauce drizzled on top or on the side.
