Marinate the Chicken
In a large bowl, combine the chicken thighs with salt, black pepper, cumin, and oregano. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes.

Add Garlic and Tomatoes
Stir in the minced garlic and chopped tomatoes. Cook for another 3-4 minutes until the tomatoes are soft.

Brown the Chicken
Add the marinated chicken thighs to the pot. Cook for about 5-7 minutes, turning occasionally, until the chicken is browned on all sides.

Add Broth and Vegetables
Pour in the chicken broth, and add the sliced carrot, cubed potato, and bay leaves. Bring the mixture to a boil.

Simmer the Stew
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the chicken is cooked through and tender.

Finish with Cilantro
Remove the bay leaves, stir in the chopped cilantro, and adjust seasoning with salt and pepper if necessary.
