Preparation

  1. 1

    Prep the Ingredients

Cut the chicken, beef, and pork into pieces. Peel and chop the yuca, plantains, potatoes, and carrots.

  2. 2

    Chop Vegetables

Chop the onion, bell pepper, and garlic, and set aside.

Cooking

  1. 3

    Cook the Meat

In a large pot, add the chicken, beef, and pork. Pour in the water and bring to a boil. Reduce heat and let it simmer for about 30 minutes.

  2. 4

    Add Vegetables

After 30 minutes, add yuca, plantains, corn, potatoes, and carrots to the pot. Stir to combine.

  3. 5

    Season the Broth

Add minced garlic, chopped onion, bell pepper, cilantro, oregano, salt, and black pepper to the pot. Stir well.

  4. 6

    Simmer

Cover the pot and let it simmer for another 30-40 minutes, or until the meat is tender and the vegetables are cooked through.

  5. 7

    Finish with Lime

Once cooked, stir in the lime juice and adjust seasoning if needed. Let it sit for a few minutes before serving.
