Preparing the Mangu

    Peel the Plantains

    Using a sharp knife, carefully cut off the ends of the green plantains and make a shallow lengthwise slit along the skin. Gently peel off the skin to reveal the flesh.

    Boil the Plantains

    In a large pot, add 4 cups of water and bring it to a boil. Add the peeled plantains and 1 teaspoon of salt. Cook for about 20-25 minutes or until the plantains are tender when pierced with a fork.

    Mash the Plantains

    Once cooked, drain the plantains and return them to the pot. Add 2 tablespoons of butter and mash the plantains until smooth and creamy. Adjust seasoning with more salt if necessary.

Frying the Cheese

    Prepare the Cheese

    Cut the queso de freir into thick slices (about 1-inch thick). This will help it hold its shape while frying.

    Heat the Oil

    In a large skillet, heat 1 cup of vegetable oil over medium heat until hot but not smoking.

    Fry the Cheese

    Carefully add the cheese slices to the hot oil. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove from the skillet and drain on paper towels.
