    Cook the Pasta

    In a pot of salted boiling water, cook the macaroni pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Ground Beef

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until soft. Add ground beef, paprika, salt, and black pepper. Cook until the beef is browned and cooked through. Drain excess fat.

    Make the Cheese Sauce

    In a saucepan, melt butter over medium heat. Stir in the milk and bring to a simmer. Gradually add the cheddar cheese while stirring until melted and smooth. Mix in the cooked macaroni and combine well.

    Combine Mixtures

    Add the cooked ground beef to the mac and cheese mixture. Stir to combine and set aside.

    Prepare Plantains

    Peel the ripe plantains and cut them in half lengthwise. Preheat the oven to 375°F (190°C).

    Stuff the Plantains

    Scoop out a bit of the center of each plantain half to create a hollow space. Fill each hollow with the mac and cheese beef mixture.

    Bake

    Place the stuffed plantains on a baking sheet. Bake in the preheated oven for about 20-25 minutes, or until the plantains are tender and slightly golden.

    Garnish and Serve

    Remove from the oven, sprinkle with chopped parsley, and serve warm.
