Instructions
- 1
Prepare the Plantains
Peel the green plantains by cutting off the ends and making a lengthwise slit in the skin. Remove the skin and cut the plantains into 1-inch pieces.
- 2
Boil the Plantains
In a large pot, bring 4 cups of water to a boil. Add the plantain pieces and the garlic cloves. Cook for about 15-20 minutes, or until the plantains are tender and easily pierced with a fork.
- 3
Drain and Mash
Once cooked, drain the plantains and garlic. In a mixing bowl, mash the plantains and garlic together using a potato masher or fork until smooth.
- 4
Season and Mix
Add olive oil, salt, black pepper, and lime juice to the mashed plantains. Mix well until all ingredients are fully incorporated.
- 5
Garnish and Serve
If desired, stir in chopped cilantro for added flavor. Serve warm as a side dish.
