    Prepare the Caramel

    In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, stirring gently until the sugar dissolves and the mixture begins to boil.

    Make the Caramel

    Once boiling, stop stirring and allow the sugar to cook until it turns a golden amber color. Be careful not to burn it. Quickly pour the caramel into a round cake pan, tilting to coat the bottom evenly. Set aside to cool and harden.

    Mix the Custard

    In a large bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, and vanilla extract until well combined.

    Combine and Strain

    Pour the custard mixture through a fine-mesh sieve into the prepared caramel-coated pan to remove any lumps.

    Bake the Flan

    Preheat your oven to 350°F (175°C). Place the flan pan in a larger baking dish and fill the larger dish with hot water until it reaches halfway up the sides of the flan pan. Bake for about 50-60 minutes or until the custard is set.

    Cool and Serve

    Allow the flan to cool to room temperature, then refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges of the pan, then invert onto a serving plate.
