Prepare the Ingredients
Slice the chorizo sausage into thick rounds. Chop the onion and mince the garlic.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

Cook the Chorizo
Add the sliced chorizo to the skillet and cook until they are browned on both sides, about 5-7 minutes.

Add Wine and Spices
Pour in the red wine and add the bay leaf, paprika, salt, and black pepper. Stir well to combine.

Simmer
Bring the mixture to a simmer and reduce the heat to low. Let it cook for about 15-20 minutes, allowing the flavors to meld and the sauce to thicken.

Remove the bay leaf and serve the chorizo al vino warm, garnished with fresh herbs if desired.
