Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method). Stir until smooth, then remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, whip 200 ml of heavy cream until soft peaks form. Add the vanilla extract and mix until combined. Set aside.

Beat the Egg Whites
In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar and continue to beat until glossy and stiff peaks form.

Combine Ingredients
Fold the melted chocolate into the whipped cream gently until fully incorporated. Then, fold in the beaten egg whites in three additions, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse mixture into individual serving dishes or cups. Refrigerate for at least 2 hours or until set.

Serve
Before serving, whip the remaining heavy cream until soft peaks form and top each mousse with a dollop of whipped cream. Optionally, you can garnish with chocolate shavings or berries.
