Directions

  1. 1

    Prepare the Oven

Preheat your oven to 220°C (425°F). Grease four ramekins with butter and dust with cocoa powder.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water or in the microwave, stirring until smooth.

  3. 3

    Mix Sugar and Eggs

In another bowl, whisk together the granulated sugar, large eggs, and egg yolks until thick and pale. Stir in the vanilla extract.

  4. 4

    Combine Mixtures

Pour the melted chocolate and butter mixture into the egg mixture, stirring gently until combined.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour and salt, and fold gently until just combined. Be careful not to overmix.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  7. 7

    Bake

Place ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm while the center remains soft.

  8. 8

    Cool and Serve

Remove from the oven and let the cakes sit for 1 minute. Carefully invert each ramekin onto a plate, allowing the molten center to flow out. Serve immediately, optionally with vanilla ice cream.
