Method
For the Chicken Skewers
- 1
Prepare the Marinade
In a medium bowl, whisk together the olive oil, minced garlic, lemon juice, soy sauce, honey, red pepper flakes, salt, and black pepper until well combined.
- 2
Marinate the Chicken
Cut the chicken breasts into 1-inch cubes and add them to the marinade. Toss well to coat the chicken evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.
- 3
Prepare Skewers
While the chicken is marinating, soak the wooden skewers in water for about 30 minutes to prevent burning on the grill.
- 4
Skewer the Chicken
After marinating, thread the chicken cubes onto the soaked skewers, about 4-5 pieces per skewer.
- 5
For the Spicy Peanut Sauce
- 6
Mix the Sauce Ingredients
In a bowl, combine the creamy peanut butter, soy sauce, honey, Sriracha sauce, lime juice, water, garlic powder, and ground ginger. Stir until smooth and well blended.
- 7
Adjust Consistency
If the sauce is too thick, add more water, one tablespoon at a time, until the desired consistency is reached.
